Heart empire biscuits
Accidental Valentine’s day content alert! I made these empire biscuits with Ellis at the weekend, we don’t have the round cookie cutters, the heart is the biggest one we had. I didn’t even remember that Valentine’s Day was coming up til Tuesday (we don’t celebrate), but then it spurred me on to get these blogged quickly for a bit of topicalness.
I should probably explain what empire biscuits usually look like for the non-Scotland based people. They are big round things, you just have the one biscuit like a piece of cake, and they usually have a gummy sweet (fruit pastilles, I think theyr’e called?) or glace cherry on top. The biscuit is basically a shortbread with an egg in it, so slightly less crumbly.
Here’s the recipe:
Ingredients
225g butter
325g plain flour pluis extra for rolling out
125g caster sugar
1 medium egg
raspberry jam
icing sugar
lemon juice (or other liquid)
Method
Preheat oven at 180 degrees
Cream the butter and caster sugar
Add the egg and whisk until combined
Add flour and whisk until fully combined
Roll out 1cm thick and cut out an even number of shapes of your choice. The dough is quite sticky so I needed to use lots of flour for the rolling
Bake 12-15 minutes until just starting to brown
When bisucuits are cooled down, sandwhich together with the jam
Make the icing out of the icing sugar and lemon juice
Ice the biscuits
